Lynne's Tuscan Chicken Stew

"Was looking for a Tuscan chicken stew recipe that mimicked what I had at my dad,s senior living home. I changed a few things from one of the recipes I found on this website. Here is what I came up with."

  • Brown chicken in hot oil over medium high heat. Remove from pan and set aside.
  • Add green pepper and garlic to pan and cook on medium heat for 5 minutes.
  • Add canned tomatoes, water, green beans, potatoes, Italian seasoning, salt and pepper.
  • Return chicken to pan. Bring to boil, then cover and simmer on med/low heat for about a half hour or until potatoes are tender.
  • Stir in the cannellini beans. Enjoy.

  1. This is a keeper! The only change was that I used canned green beans instead of frozen because that's what I had. Loved the flavor and it was easy to make!

With it just being my husband and myself living at our home, now that the kids are up and out. I stumbled accross this website when looking for new recipe's to try. I still enjoy cooking for my now larger family at times, including 3 grandkids, and my daughter and her husband, son and his wife, youngest son just moved to Colorado :(. My hobbies are cooking(now that I have new recipes to try), gardening, swimming and camping.
