1. Great banana bread! I used lite butter instead of shortening and used the baking powder as you suggested. I baked in mini loaf pans and got 4 light and moist little loaves. Not too sweet with great banana flavor - really enjoyed this bread - thanks for sharing the recipe! Made for Fall PAC 2009

 2. This was really easy to make! I creamed the sugar and shortening first (habit, I'm afraid), then read the directions, and added everything else. I popped it in the oven, and it made a lovely loaf with a very simple banana flavour - perfect!! I hope my pics turned out, because DH had taken the slices I cut seconds after I walked away with the camera! It's that good! I did use the baking powder. I think I'd like to try it again with the soda and see what the difference might be. :) This is a very simple, perfect banana bread that I will make again, and again. Thanks, Cinisajoy! Made for PAC Fall '09.

 3. Delicious! I love banana bread, and this recipe is awesome in that it uses 3 bananas! How cool is that! Made as directed, using organic shortening. Thanks, Cinisajoy! Made for PAC Spring '09.

 4. My family loves Banana Bread and I like to try different recipes for it. I followed this recipe, I didn't add the nuts, and I ended up with 2 great loaves of banana bread. Thanks for sharing your recipe. I will be using this one again. Made for PAC March 2009

 5. I made this recipe exactly as written with no deviations. I baked them in mini-muffin size pans and sent a double batch to work with my husband to share with his coworkers. He stated they were gone before lunch rolled around and people were inquiring if there were any left throughout the day. My husband greatly enjoyed them, as well. I taste tested one muffin and I thought it was very moist, had a nice rise; great banana flavor and thankfully, did not have that really salty aftertaste from the baking powder that many recipes of this type have. I will making these again.
