  • Heat oven to 350 F degrees.
  • Mix rice, soups, and water together.
  • Put into greased casserole dish.
  • Put chicken on top, and salt and pepper chicken.
  • Cover with aluminum foil.
  • Bake for 1 hour.
  • Uncover, continue baking for 1/2 hour until chicken is lightly browned.

  1. I enjoyed this and will make it again with a few modifications. I reduced the cook time by 15 minutes but the chicken was still a little dry. It also had a very strong onion taste so I will add more cream of chicken soup next time to add more moisture and lessen the onion taste. Thanks so much for sharing this recipe - I am glad I tried it.

  4. I make this a lot. I use large bone-in chicken breasts, they don't usually dry out. Some times I make this without the onion soup mix and substitute chopped broccoli and cheese.
     
  5. What memories this brings back! When I was in college, I had a boyfriend who was a professor at a different college. He decided that we needed to hold a dinner party to return the dinner parties we had been invited to, in addition to thanking his friends for helping with the work required to install a pool at his house. This was the recipe we used, except that we used brown rice and added two small cans of sliced mushrooms, and only cooked for a total of 45 minutes covered and about 20 minutes uncovered. The food was great -- the dinner party was a disaster for other reasons, but everyone was very nice about it all, thanks to this dish!
