I just love this! It's refreshing, warming, zesty, tangy and sweet.
- 1 cup low-fat lime yogurt or 1 cup lemon yogurt
- 1⁄2 cup chopped lychees
- 1 fresh lime juice
- 1⁄2 tablespoon honey
- 6 ice cubes
- 1⁄4 teaspoon cardamom, ground into fine powder
- Blend all in a blender till smooth and frothy.

The contrast between the sweetness from honey and yoghurt - I always buy a creamy Greek yoghurt which is slightly sweetened - and the tart citrus flavour of the lime was just SO delicious. A wonderful blend of flavours which provided a superb complement to the lychees (I had to use canned ones; that’s all that were available). This is one I know I’ll enjoy even more in summer. It will be great for breakfast or as a refreshing drink to take to work for a pick-me-up during the day. Thank you, Rita, for another great recipe.
I made this last night to satisfy a craving. I only had plain yoghurt on hand. I also had to use canned lychees, I used the juice to sweeten instead of honey. I loved the addition of lime. I made a triple batch and it was gone in seconds flat. A new family favorite. Thanks for the great recipe!!
