- 1 1⁄2 cups flour
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon cinnamon
- 1 cup sugar
- 2 eggs, well beaten
- 1 (10 ounce) box frozen strawberries, thawed
- 3⁄4 cup vegetable oil
- 3⁄4 cup chopped pecans
directions
- Preheat oven to 325*.
- Combine dry ingredients in a large bowl.
- Add eggs, strawberries and oil and mix until just combined.
- Fold in nuts and pour into a greased 9 x 5 loaf pan.
- Bake for 1 hour or until center tests done.

This is a sweet and delicious bread! I would have given it 5 stars, but I had some problems with the baking time/temperature. It browned after only about 1/2 hour, so I placed an aluminum foil tent over it and continued baking. When it was still not done on the inside after an hour and 10 minutes, I ended up having to turn the temperature up to 350 for another 5-10 minutes before the bread was finally done. When I make it again, I might try baking it at 350 from the start, or cutting the strawberries into smaller pieces, since their moisture may have had something to do with it. This bread was so tasty that it was worth it, though, and I'll definitely be trying it again!

Too many recipe reviews state margarine subbed for butter (if I list butter, it's REAL butter), different spices, low-fat ingredients, whole wheat flour instead of white, etc. The recipes will not work/taste as intended, so it's really not fair to rate them as such. <br /> <br />I'd also really appreciate it if you refrain from rating a recipe if you overcook or overbake it or it you don't refrigerate or store as listed. <br /> <br />I, of course, will adhere to the above when rating recipes, too! <br /> <br />Thanks and have a great day! <br /> <br />My Rating System: <br /> <br />***** A delicious recipe that was thoroughly enjoyed.
