This was an easy recipe to prepare. The squares smelled wonderful while baking and both my husband and I enjoyed it with our morning coffee the past 2 days. We had it warm from the oven the first time and cold the next and it was good both ways, moist and with good texture and a good blending of flavours.

I did not add the coconut and I used one whole egg instead of 2 egg whites. I did not peel my zucchini. Just before baking I placed walnut halves on top of the batter. This recipe makes a nice big batch. I froze half as I like to have something I can pull out if we have unexpected company or to give to friends. Thanks for the great recipe.

  1. In a large bowl, sift all the dry ingredients together and make a well in the center of the bowl.
  2. In another bowl, mix all the wet ingredients together then pour into the well in the bowl with the dry ingredients.
  3. Fold in the chocolate chips.
  4. Grease a 9x13 pan with cooking spray, and pour the batter inches Bake at 350F for 25 minutes or until set, then let cool and cut into 24 squares.
