Great cookie that is not real sweet, but full of flavor.

  1. Cream together Smart Balance Spread, eggs, milk, vanilla, salt, baking powder, cinnamon, lemon juice, sweetener and brown sugar in a mixer. Slowly add oats and flour. When fully combined, mix in blueberries and coconut.
  2. Drop by spoonfuls onto a cookie sheet sprayed with cooking spray and bake in a 350 degree F oven for 12 minutes.
