  • Brown meat in a large nonstick skillet. Pour off fat.
  • Add tomato puree, chili powder, garlic and onion powders, sugar and black pepper. Mix well.
  • Cook uncovered over low heat 20 minutes or until thick, stirring occasionally.
  • Heat tortillas in a nonstick skillet over medium-high heat or in a microwave oven.
  • Spoon meat mixture onto hot tortillas and top with green pepper, onion, tomatoes and lettuce.
  • Fold tortilla over filling and serve.

  1. These made for an easy weeknight dinner. I couldn,t help but add some cumin powder, I also added the onion and pepper whilst browning the meat as the kids aren't too keen on raw. Otherwise served as recommended with added cheese and jalapeno.
     
  2. Made these with corn tortillas, which were lower-sodium than the flour ones. A great, tasty, filling meal. Thanks for this low-sodium comfort food!

I am a Christian wife and mother of 3 kids. Since my DH's high cholesterol, we've been eating better. I never used to like cooking. Since eating better, I've liked learning and preparing new recipes. My kids haven't reconciled themselves to the new eating yet. I grind my own grain and make all my own breads.?Working 2 hours a day in the local high school lunch room.??I am homeschooling my high schooler.? ?Also found out 1 child has multiple food allergies (wheat, dairy, tomato, chocolate, etc) and another is gluten sensitive. So, we just started (July 09) eating gluten and dairy free. I've been busy with getting our house market ready, even though it's not the best time for that.?
