A light & healthy snack or side dish - great if you have an abundance of zucchinis. Omit bacon for a vegetarian option.

Love It! I did not measure out zucchini, I just grated up two medium ones, probably closer to 3 cups. I subbed the bacon for carrot, omitted the cheese and added salt, fresh ground pepper. I also grated the onion, baked at 175C. I also used self raising flour so I left out the baking powder.
- 2 cups coarsley grated zucchini
- 3 eggs
- 3⁄4 cup grated low-fat cheddar cheese
- 1 small onion, diced
- 1 tablespoon olive oil
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1⁄2 cup chopped bacon or 1⁄2 cup ham (optional)
