Low Fat Yogurt Mashed Potatoes

"This is one I came up with as a variation of mashed potatoes with sour cream. By substituting fat free or low fat plain yogurt you can reduce the fat in this favourite without compromising on flavour."

  1. I found this recipe in Cuisine Tonight magazine and came to post after making it and found this - YEAH!! don't have to post!! It's close with only some minor changes that I think really add to it. Added ` tablespoon olive oil and 1 teaspoon minced lemon zest and minced scallions instead of onions. It was awesome. Served with Greek Chicken Cutlets and made for a wonderful fresh, dinner that was pretty enough for company.

  2. Way too bland. I had to add parmesan, garlic powder, etc.

  3. I used 2 cups of plain fat-free yoghurt and 1 1/2 onions, and, 4 tbsps. of parsley. This was very good as a side dish. Thank you!

I am a yoga teacher, wife and new mom of a baby boy. My passions are cooking and fitness and raising our son.My husband is vegetarian and I am a converted vegetarian since the past 10 years. I grew up eating meat and I still do miss my old favourites. My commitments don't leave me much time to cook so every recipe I use has to meet 3criteria- taste really good, be quick to cook, be healthy. I do make an effort to cook foods that are low in fats and sugars. I cook lunch and dinner at home everyday and we limit eating out to once a month. So Im always thinking up new and innovative ways of cooking old favorites.
