Low-Fat Super Fiber Breakfast Bowl

"I got this recipe out of the Women's Health Perfect Body Diet book. While the diet is relatively easy to follow, and it works for me, sometimes, I just don't have time to plan every meal every day. So I eat this dish even when I'm not following the diet because its SO GOOD. You can use substitutions depending on what you want out of this breakfast (nutritional value vs. taste, but it tastes good either way!)"

  • 34 cup yogurt (I use plain, low-fat with a packet of Splenda mixed in, but you could use non-fat or low-fat plain o)
  • 1 apple, cored, peeled and diced
  • 12 cup Fiber One cereal (I love the Honey Clusters version for this dish)
  • 2 g glucomannan (a soluble fiber you add to your meals when you're on the diet) (optional)

  • If you are using the glucomannan (you definitely don't have to! Plenty of fiber already in this dish!), mix the glucomannan and the yogurt w/ a whisk. Add the apple and cereal, mix well, and enjoy! (sometimes if I'm in a hurry, I just throw the apple in a food processor to chop it, then I fold in all the other ingredients.
