- 177.44 ml sugar
- 78.78 ml unsweetened applesauce
- 1 egg white
- 4.92 ml vanilla
- 354.88 ml flour
- 2.46 ml baking powder
- 1.23 ml salt

- 157.80 ml powdered sugar
- 22.18 ml low-fat butter
- 2.46 ml vanilla
- water
directions
- Preheat oven to 350 degrees.
- Combine apple sauce and sugar until well mixed.
- Add egg and vanilla and continue to mix.
- Combine flour, baking powder, and salt in another bowl. Add gradually to egg mixture.
- Take roughly a tablespoon size portion of dough and place it onto a lighty greased cookie sheet. Works best if pressed flat (the dough when making the cookie).
- Bake in oven for 10 minutes.
- Take out of oven and remove from cookie sheet.
- To make the frosting, in an electric mixer preferably, combine powdered sugar and butter and vanilla. Add water according to consistency of frosting.

I made these today for my family, and I thought they were pretty good. I prefer chewier cookies, but I knew coming in to this that, by using applesauce, I wouldn't get the texture I like best. My brother thought the texture was a bit weird, but I liked it, as did my parents. I got a yield of a little under 30 cookies. I didn't really flatten them much before baking, so they spent a little extra time in the oven (one tray maybe spent 11 minutes in the oven and turned out pretty soft, while the other spent maybe 13 and was a bit firmer). I did not frost them.

The cookies turned out great, had a nice flavor. They were mildly sweet, like a slightly sweet biscuit, but denser and in the shape of a cooker. The frosting was, eh. The frosting tasted too buttery. So I ended up eating the cookies plain! I might make these again, but try some different things with the frosting. Or maybe I'll go frosting-less again!
