Low Fat Prune and Fruit Muffins

  1. Mix bran, prune juice, skim milk and brown sugar.
  2. Set aside for ten minutes.
  3. Stir in beaten eggs, flours, baking powder, nutmet, cinnamon and salt.
  4. Blend thoroughly.
  5. Stir in apple sauce raisins and walnuts.
  6. Spoon equally divided into greased muffin tins.
  7. Bake in 425 degree oven for 15-20 minutes until lightly brown and springy to the touch.

Updated review: I really like these muffins- very healthy snack. I did substitute a bit: soft whole wheat pastry flour for the entire 1.5 cups, unsweetened almond milk for regular milk, and organic palm sugar for brown sugar. I love how filling they are and they get things moving... if you know what I mean (drink lot's of water with them). They taste much better the day after as well.
