Low-Fat Potatoes Romanoff

These were amazing, however I didn't make them low-fat. I used regular cheddar cheese and regular sour cream...but they were fantastic! Raves all around the table.

Directions

  1. Boil potatoes until tender.
  2. Mash with butter, sour cream, onions, 3/4 cup cheese, salt and pepper.
  3. Turn mixture into buttered 1-1/2 quart casserole. Sprinkle with remaining cheese and paprika.
  4. Bake uncovered at 350 degrees for 40 minutes.
