Very basic creamy potato soup


  1. Chop onions, celery, and mushrooms and saute in in olive oil in 5-qt. pan until semi-soft. (I normally use less celery, but recipe can be changed to use whatever vegies you have on hand.).
  2. Add flour and stir well. Then add broth, milk, and water a little at a time so the soup does not cool too much.
  3. Chop potatoes and carrots and add to soup.
  4. Simmer until done. Season with salt, pepper, and any other desired seasonings.

I like this recipe and have used it for several months now. I've converted it to a clam chowder by replacing the water with the liquid and meat from 3 cans of clams. I've also taken out the salt since the clams are already a bit salty.
