- 236.59 ml sultana
- 118.29 ml glace cherries
- 118.29 ml raisins
- 29.58 ml brandy
- 14.79 ml water
- 236.59 ml cooked mashed pumpkin
- 2 eggs, beaten
- 118.29 ml apple juice
- 118.29 ml low-fat milk
- 118.29 ml chopped pecans or 118.29 ml walnuts
- 4.92 ml grated fresh lemon rind
- 4.92 ml grated orange rind
- 4.92 ml mixed spice
- 4.92 ml cinnamon
- 236.59 ml self raising flour
- 236.59 ml white lily self-rising flour
- 2.46 ml bicarbonate of soda
directions
- Preheat oven to 200 degrees Celsius.
- Mix sultanas, raisins, cherries, brandy, water and soak overnight.
- Mix pumpkin, eggs, applice juice, and milk in a bowl.
- Add soaked fruit, nuts, rinds and spices, then flours and bicarbonate of soda.
- Mix well with a wooden spoon as you add the flours.
- Spoon into a lightly greased tin.
- Bake for 10 minutes at 200 degrees C, then turn down to 180 degrees C and cook until baked through (approximately 1 hour).
- Cool on a cake wire.
- Store in the refrigerator.
