Deliciously healthy small batch of muffins.
- 1 cup all-bran cereal (I use AllBran)
- 1⁄2 cup whole wheat flour
- 2 teaspoons baking powder
- 2 egg whites
- 1⁄2 cup nonfat milk
- 1⁄4 cup sugar substitute
- 1⁄4 cup pineapple chunk
- Combine milk and bran cereal and set aside for 5 minutes.
- Combine flour, baking powder, and salt. Add to bran, then add egg white. Mix in pineapple chunks.
- Divide into 6 sprayed muffin cups. Bake at 400°F for 18 minutes or to test.
