ingredients
- 1 1⁄2 cups sugar
- 2 tablespoons canola oil
- 3⁄4 cup applesauce
- 2 eggs
- 1 egg white
- 1 1⁄2 cups pumpkin
- 1⁄2 cup water
- 3 cups whole wheat flour
- 1 1⁄2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1⁄2 teaspoon ground cloves
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- raisins and nuts (walnut, pecans) (optional)
- 1⁄4 cup brown sugar (topping)
directions
- Mix together sugar, oil, applesauce, eggs, pumpkin, and water.
- In a separate bowl mix flour, baking powder, baking soda, and spices.
- Using a mixer add the dry ingredients to the first mixture.
- Add raisins and nuts if desired.
- Let stand 45-60 min at room temperature.
- Place into greased muffing tins.
- Sprinkle brown sugar onto each muffin.
- Bake in preheated oven at 400 degrees F for 12-15 minutes.
