  • Mix together sugar, oil, applesauce, eggs, pumpkin, and water.
  • In a separate bowl mix flour, baking powder, baking soda, and spices.
  • Using a mixer add the dry ingredients to the first mixture.
  • Add raisins and nuts if desired.
  • Let stand 45-60 min at room temperature.
  • Place into greased muffing tins.
  • Sprinkle brown sugar onto each muffin.
  • Bake in preheated oven at 400 degrees F for 12-15 minutes.
