Tasty low fat, high fiber pumpkin muffins

Ingredients Nutrition


  1. Mix together sugar, oil, applesauce, eggs, pumpkin, and water.
  2. In a separate bowl mix flour, baking powder, baking soda, and spices.
  3. Using a mixer add the dry ingredients to the first mixture.
  4. Add raisins and nuts if desired.
  5. Let stand 45-60 min at room temperature.
  6. Place into greased muffing tins.
  7. Sprinkle brown sugar onto each muffin.
  8. Bake in preheated oven at 400 degrees F for 12-15 minutes.
