This is a very creamy, delicious salad with the same great taste as regular waldorf salad but with less calories.
- 1 -2 cup low-fat vanilla yogurt
- 1 green apple
- 1 red apple
- 1⁄2 cup celery, diced
- 1⁄2 cup craisins
- 1⁄2 cup walnuts, chopped
- Dice both apples into small pieces and leave skin on.
- Add celery, craisans and walnuts. Add as much vanilla yogurt as you desire.
- Chill and serve.
Super fast salad, had it to the table in less than 10 minutes! I used one 6oz (170g) cup of fat-free plain yogurt and added a little vanilla since I had the plain yogurt already on hand. I thought the salad was plenty creamy with that amount. I really like the contrast between the sweet craisins and walnuts.
