Sweet & cinnamon-y! I concocted this recipe when I wanted cooked apples but needed to do dinner prep ahead of time. And I didn't want a large amount of 'sauce', and didn't want butter in it! *Don't overcook this- the liquid will disappear and the apples will turn to mush. Keep an eye on it the first time you make it and record the cooking time!
- 2 large apples
- 1⁄2 cup shredded coconut
- 1⁄4 cup maple syrup
- 1 tablespoon cornstarch
- 1 teaspoon cinnamon
- Combine all ingredients except apples in a small bowl; the mixture will be thick, without much liquid.
- Core apples, peel, and slice into rings.
- Place about a third of the apples into a small, 3 quart crockpot, and top with about a third of the coconut mixture. Repeat layers.
- Cook, covered, on low setting for about 2 1/2 hours. Stir once. (There will not be a lot of goopy sauce; just enough to flavor every apple slice!).
- Serve warm!
