Low - Fat Creamy Mushroom and Rice

I am on a low - fat diet and am trying to come up with tasty and satisfying recipes. this is one side dish all will enjoy!

Ingredients Nutrition

  • 1 (10 3/4 ounce) can low-fat cream of mushroom soup
  • 1 cup beef stock
  • 12 cup water
  • 12 cup chopped mushroom
  • 1 12 cups Minute Rice

Directions

  1. In sauce pan bring soup, stock, and water and mushrooms to boil.
  2. Add rice, stir and cover for 10 minutes.

This was a very nice side dish and super easy. I discovered when I went to make this that I did not have any beef broth/stock (had thought I did) so used vegetable "Better Than Bouillon" and it worked just fine. Otherwise followed the recipe to a T, except I had closer to 1 cup chopped mushrooms. Went very nice with something a little sweet (I served with your Recipe #148559). Thanks for the recipe! - April 13, 2008 Update: Just want to add that this is much better when it is first made as the rice gets a little crunchy after it sits in the fridge. Still tasty though!
