This is delicious, I found it and modified it to fit into my weight watchers life style.. cut into 8-- its 3 points each piece!
- 1 cup cornmeal
- 1 cup flour
- 1⁄4 cup sugar
- 1⁄2 teaspoon salt
- 1⁄2 cup egg substitute
- 1 cup plain fat-free yogurt
- Mix dry ingredients and add the wet.
- Combine and bake in bread pan for 25-30 minutes at 375 degrees.
I really appreciate your recipe for a low fat, sugar free cornbread recipe. I made this on Sunday and I double checked the recipe to make sure I didn't make a mistake. The recipe did not turn out. It was very heavy, only about an inch high and very compact. I so wanted this recipe to be an alternative for regular cornbread. Thank You
I think you need at least 1t baking soda. Its actually pretty similar to a couple of recipes here
I think this is missing the leavening, it didn't turnout well.
