Low Fat Cheesecake

This is a smooth, rich tasting dessert, yet it is low in fat.

  1. Preheat oven to 350 degrees.
  2. In a mixing bowl, beat cream cheese, 2/3 cup sugar and 1/2 teaspoon vanilla until fluffy. Gradually add egg substitute and beat until smooth.
  3. Pour into a 9-in. pie plate that has been coated with cooking spray.
  4. Bake for 30-35 minutes or until puffy and light brown around the edges.
  5. Cool on a wire rack for 10 minutes.
  6. Combine sour cream, remaining sugar and vanilla. Spread over cheesecake.
  7. Bake 15 minutes longer.
  8. Cool completely on a wire rack, then refrigerate.
  9. Before serving, top with cherry pie filling.
