Low-Fat Cauliflower with Bacon

  • Place cauliflower in a steamer basket over boiling water.
  • Cover pan and steam about 8 minutes or until almost tender.
  • Remove steamer basket and set aside. Heat a heavy nonstick skillet over medium high heat. Cook bacon 4-5 minutes or until browned.
  • Add scallions, cauliflower and salt and pepper to taste. Cook 2 minutes, stirring frequently until hot.

  1. Dancer what a super way to dress up plain steamed cauliflower. The bacon and scallions gave such flavor to the cauliflower. This is quick and so easy to fix. I steamed the cauliflower in the microwave and used turkey bacon to make it even more healthy. I will do this recipe again!

  5. My husband loves cauliflower, but it isn't one of my favorites. This dish was a nice side on which we both found to be delicious. After frying the bacon, I did remove the majority of the dripping from the pan...leaving just enough to add flavor without all of the fat calories. To satisfy Hubby's cravings, I prepared a simple cheese sauce that he drizzled over his serving. I left mine as stated in the recipe. Both of us were happy. :)
