This is a great lower-fat stand-in for most ceasar salad dressings.
- 2 tablespoons fresh lemon juice
- 2 tablespoons water
- 1 tablespoon olive oil
- 1 teaspoon anchovy paste
- 1⁄8 teaspoon fresh ground pepper
- 1 garlic clove, crushed
- 1⁄8 cup grated fresh parmesan cheese
- Combine all ingredients and toss with salad greens.
