- 5 tablespoons non fat dry buttermilk
- 2⁄3 cup water
- 1 cup hot sauce
- 2 tablespoons white vinegar
- 2 whole chicken breasts
- 1 1⁄2 cups panko breadcrumbs
- 8 ounces low-fat sour cream
- 6 ounces blue cheese, crumbled
- 1 teaspoon low-fat mayonnaise
- 2 eggs

directions
- 1. preheat oven to 425.
- 2. cut chicken into breasts and tenderloins and cut the breasts in two (thick-wise).
- 3. coat in the egg and then the panko.
- 4. place chix on sprayed baking sheet and spray chick with cooking spray.
- 5. bake for about 10 minutes and then flip and continue for another 1o minutes.
- 6. combine blue cheese, sour cream and mayo to make blue cheese sauce.
- 7. combine buttermilk powder and water and mix thorooughly. then add hot sauce and vinegar.
- 8. simmer the sauce until it thickens (8-10 minutes).
- 9. serve as a sandwich with lettuce.
