  • Heat oven to 400 degrees.
  • Mix first six ingredients in a medium bowl.
  • Mix the rest of the ingredients together in a larger bowl.
  • Add dry ingredients to wet ingredients. Stir but do not overbeat.
  • Spoon into non-stick muffin tins (or spray with vegetable oil spray).
  • Bake for 16-18 minutes or until a knife comes out clean.
