Low Fat Blackberry Cobbler

"No butter or oils added. I arranged this on my own and it came out great. Easy to make and so tasty. The pan fits perfectly in the toaster oven."

  • Preheat oven to 350 and spray a 7"x 9" baking pan.
  • In a medium bowl, mix all ingredients together well, except blackberries and pour into pan.
  • Place blackberries on top of the batter.
  • If using frozen blackberries allow them to partially defrost.
  • Bake 45-50 minutes, or until dark golden brown.
  • Remember this will appear darker than what you may be used to.

  1. Excellent recipe! I used Splenda & the Splenda blend brown sugar & added 1 tsp vanilla. Also used 1/2 blackberries & 1/2 raspberries but it came out great! I was concerned at first about it being soggy but the berries blended just right with the batter & made it perfect. If any of you are doing Weight Watchers the PointsPlus value (cutting it in 6 servings) is only 3, figured on the WW site. (it'll probably be 2 on the original points plan)
     
  2. This is good! More of a bar recipe than a cobbler, but I expected that from the ingredients. I made a few changes based on personal taste and available berries. I added a splash of vanilla to the batter and to the berries, and a splash of lemon juice to the berries. I also left out the white sugar entirely, and it was still sweet enough for us. I used mostly blackberries with a little blueberry and strawberry. Next time I want to try strawberries and rhubarb! And all blueberries would be great, too. I bet you could add a little cream cheese for yet another variation. Many possibilities. Thanks for the recipe. :)
     
  3. Just fabulous!!! I used splenda instead of sugar and it was still great! I even cut the recipe in half because I only had one cup of blackberries that I needed to use before they went bad. Same cooking time and it turned out great!! Thank you so much for this easy easy recipe!!!
     
  4. I fixed this yesterday with some freshly-picked blackberries. The whole family loved it! I had to use crushed graham crackers in place of the whole wheat graham flour and I sprinkled some extra brown sugar over the blackberries before I popped them in the oven. My boyfriend suggested adding in a little vanilla in the future, which I will try. Went great with vanilla ice cream =) Thanks for sharing. I plan to use this again!
