Low Fat Banana Wacky Cake

Had an old banana laying around, looked up a wacky cake recipe and edited it to the types of food I usually eat. (aka: low fat/healthier) It is pretty gooey, but I may not have cooked it long enough, also a little chewy because of the oatmeal.

  1. Stir together dry ingredients.
  2. Make three wells in mix.
  3. put banana and oil in one well, vinegar in another and vanilla in the third.
  4. Pour water over top.
  5. Stir.
  6. Pour into 8x8 pan.
  7. Bake at 375 for around 30 min until springs back when touched or comes out clean when poked w/fork.

This is similar to what we have made for years, called "Crazy Cake", with the addition of oatmeal and banana, which are nice additions! This had a great flavor and was quite moist for being so low in fat. As I was reading the recipe i noticed there was no leavening agent included, so I dug out my Crazy Cake recipe saw that it used baking soda. I added 1 teaspoon of baking soda. I also increased the vinegar to 2 teaspoons.
