- 3 cups broccoli
- 2 tablespoons butter
- 1⁄4 cup red bell pepper, diced
- 1⁄2 cup carrot, diced
- 1⁄2 cup onion, diced
- 6 ounces cream cheese
- 1 cup vegetable broth
- 1 cup light beer
- 1 cup colby-monterey jack cheese, shredded
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
directions
- Steam broccoli until tender.
- Dice onion, carrot, and red bell pepper.
- Saute onion, carrot, and red bell pepper in butter until tender.
- If in block form, shred cheese.
- Combine all ingredients into a high-sided mixing bowl.
- Use an immersion blender to mix until uniform consistency.
