Low-carb turkey wraps

"The inspiration for this came from the South Beach Diet. They used Cilantro mayonaise, which sounded good too. This is so easy, quick and low carb!"

  • Lay the lettuce leaf flat on a plate.
  • Place one slice of turkey.
  • Spread with pesto.
  • Top with 1/2 of the red pepper slices.
  • Roll up.
  • Repeat with second piece of lettuce and turkey.

  1. I tried this wraps with a few variations. I used romaine lettuce. I did not have pesto handy so I used red pepper spread instead. The spread gave the wraps a unique flavor not to mention the nice color mixed with the mayo. In addition I added slices of avocado. I diced the red pepper instead if slicing it, so the fresh red pepper was really a decoration that gave a nice crunchy presentation to the platter. This was a fresh new idea that my husband and I enjoyed for a change. I will make them again. Very quick to prepare and certainly healthy. Thank you!
