Low Carb Stuffed Cabbage Casserole

- 1 lb ground beef
- 1 small cabbage (about 3 cups cooked)
- 1 (16 ounce) can stewed tomatoes
- 1 cup shredded cheddar cheese
directions
- Chop cabbage, and place in a dutch oven.
- Cover with water and boil 2o minutes or until tender.
- Brown ground beef and drain well.
- Mix cabbage and beef together.
- Place 1/3 of meat mixture in a 13x9x2 baking dish.
- Top with 1/3 can of tomatoes.
- Top with 1/3 cup of shredded cheese.
- Repeat layers 2 times, making 3 layers in all.
- Bake uncovered at 350 degrees for 1 hour.

We like sweet and sour stuffed cabbage so I cooked the cabbage a bit differently then directed. I sauteed the it in olive oil and added salt, pepper and Splenda (to keep it South Beach friendly). I found the 9 x 13 baking dish to large to make three layers. I also added another can of stewed tomatoes....one just didn't seem to be enough. This was so quick and easy to make and tasted like the real thing. I'll be making this many times over. Thanks for sharing.

A "low carb recipe" should be healthy. Adding all that butter, cheese, and ground beef instead of ground turkey defeats the purpose of being healthy. Actually a little brown rice would be healthier. I'm not attempting to be mean, I am just stating facts for people wanting to eat healthy low carb meals.

I am also a fan of NASCAR. I have only been to 2 tracks, Talladega several times and Dover once, but I hope to visit many more. Pocono is only an hour away, so maybe someday! Atlanta is another real possibility with family close by.
My furbaby Wickett (a pekinese-poodle mix I had for almost 14 years) went to live at the Rainbow Bridge on April 4, 2007. He was literally my first born child! He will always be in my heart. We have a new dog now, Roxie, who is a Shih-tzu. I am an animal lover, and will always have a pet!
