Low Carb Stuffed Cabbage Casserole

"This is a great casserole for anyone on a Low Carb diet. It has tons of flavor and you'll never miss the rice! When I can spare the extra carbs, I saute the cabbage in butter with about 1/4 cup chopped onion rather than boiling it. Or I add a little onion powder to the browned beef."

  • Chop cabbage, and place in a dutch oven.
  • Cover with water and boil 2o minutes or until tender.
  • Brown ground beef and drain well.
  • Mix cabbage and beef together.
  • Place 1/3 of meat mixture in a 13x9x2 baking dish.
  • Top with 1/3 can of tomatoes.
  • Top with 1/3 cup of shredded cheese.
  • Repeat layers 2 times, making 3 layers in all.
  • Bake uncovered at 350 degrees for 1 hour.

  1. I found this to be rather dry, with little flavor other than the meat. I would not recommend a 9x13 dish, I had a hard time getting two layers to cover the pan, I would suggest an 8x8. The low carbs are nice, and it was filling, just not very flavorful.
     
  2. I was looking for an easy low-carb recipe and found this. It is sooo good - very surprising for only 4 ingredients! I used extra sauce (about 20 ounces crushed tomatoes with basil) and extra cheese. We thought it was very flavorful and satisfying. Thanks for posting this recipe!
     
  3. Thought this was very close to cabbage rolls. Used no cheese but added cooked chopped bacon to the meat, also chopped cooked onion and garlic. If I had had some cooked rice I would have added that too. Also, I drained the cabbage and put a layer of cabbage, layer of meat, tomato etc. Really tasty!
     
  4. We found this to be a little bland. I will make it again using tomato sauce and adding some italian seasoning and garlic. It was very watery - not sure how to prevent that. All in all, we liked it and will make again with our changes. Thanks for a hearty low carb main dish.
     
  5. We like sweet and sour stuffed cabbage so I cooked the cabbage a bit differently then directed. I sauteed the it in olive oil and added salt, pepper and Splenda (to keep it South Beach friendly). I found the 9 x 13 baking dish to large to make three layers. I also added another can of stewed tomatoes....one just didn't seem to be enough. This was so quick and easy to make and tasted like the real thing. I'll be making this many times over. Thanks for sharing.

  1. I like too add one chopped green pepper and garlic. Sometimes if I have any tomatoes I need too use up I will through them in.
     
  2. A "low carb recipe" should be healthy. Adding all that butter, cheese, and ground beef instead of ground turkey defeats the purpose of being healthy. Actually a little brown rice would be healthier. I'm not attempting to be mean, I am just stating facts for people wanting to eat healthy low carb meals.

Atlanta is another real possibility with family close by. My furbaby Wickett (a pekinese-poodle mix I had for almost 14 years) went to live at the Rainbow Bridge on April 4, 2007. He was literally my first born child! He will always be in my heart. We have a new dog now, Roxie, who is a Shih-tzu.
