  • In large skillet, fry bacon until crisp; drain well and set aside.
  • In same skillet, brown the hamburger and onion, seasoning with salt and pepper; drain fat.
  • In 8"x12" baking dish, mix hamburger, bacon, onion and garlic powders.
  • Check seasoning for salt and adjust if needed, then stir in the beaten egg and 1/2 the cheese.
  • Spread over bottom of baking dish.
  • Meanwhile, in medium pot, cook green beans according to package directions; drain well then return to pot and stir in 1 tablespoon butter.
  • Season to taste with salt.
  • Spread beans over meat layer. In same pot, cook cauliflower 10-12 minutes until very tender; drain well.
  • Put cauliflower, 2 tablespoons butter and sour cream in food processor.
  • Puree until smooth.
  • Adjust seasoning, if necessary, then spread evenly over green beans.
  • Sprinkle remaining cheese over the top.
  • Bake at 350º for 35 minutes, until hot and bubbly.

  1. This is low carb comfort food at it's finest! My family devoured the entire pan. Definitely a keeper!!! Oh, the only thing I may try next time is to double the amount of cauliflower puree so that the top layer of faux potato is a little more true to the proportion of traditional Shepard's pie.The recipe as written only yields enough to barely cover the meat mixture. Still... it's delish!!!
     
  2. DELICIOUS!! My bf loved it too. I added a can of beef broth, jalapeño and bell peppers to the hamburger. I used half a pack of chili season packet for flavor. This is by far the best comfort food I have made to date. Looking forward to eating the leftovers tomorrow. I attached picture. Mmmmm.

  3. The topping to me was a bit dry as well as the meat and the cheese just formed a thick layer that mushed up the cauliflower when you dug into it. If I made this again I would probably use ground turkey cooked with this creole mix they sell at Walmart here (its like onions, green peppers, and other things) and seasonings. Then I might mix in some chicken stock to make the meat a bit more moist. In terms of the topping I would still double it as recommended (I also used canned green beans like another reviewer) but I would probably use more sour cream and mix the cheese in with the cauliflower to see how it came out.
     
  4. This is really good. The different thing that I did was I used salt reduced canned green beans and I didn't use bacon. I also used a 3x14 pan. Family liked it. Was told to make it again.
     
  5. Loved it. I'm on a gestational diabetes diet and looking for uber-low carb. What I did, though, was make instant potatoes with 1/2 half & half & water and the hot water it called for & then added 1/2 the amount of cauliflower (which I really don't like) to the potatoes and you couldn't tell and my blood sugar was still low :)
