This was perfect! I love the low carb and I didn't spoil it. I also made a sauce with mayo, wasabi and a splash of hot sauce. This was perfect. I didn't have peppers but I will add some next time. You can also spice it up by using spicier sausage and the hot pork rinds. This is a keeper! Thank you so much!!
Made these tonight, tweeking the jalapeno and pork rind ingredients. I added a bit more of both. Make sure to evenly portion out the mix before wrapping the eggs, as I found it was just enough - not to mention I added a little of most of the ingredients. <br/><br/>Made it with spicy sausage and they turned out pretty good. As a low carb eater (high fat diet), these will certainly be in my rotation.
These were awfully good and pretty easy to make. The hardest part was boiling the eggs, lol. Next time I will mix ground beef or turkey 50/50 with the pork sausage (just personal preference). I served these over mashed potatoes, thereby spoiling the low-carb effect, but could have used mashed cauliflower just as successfully. I sliced them and served with a bit of mushroom gravy as well.
