Here's a fast, easy and delicious low carb chicken recipe that's sure to please the whole family. Serve this with a loaded green salad and sprouted grain bread and you have the perfect low carb meal. I made this for my hubby and he loved it. It's even good cold. Now that's a good recipe! I got this recipe from Sparks People and tweeked it a little bit.

  1. Slice chicken breast in half making 8 thin steaks. Brown chicken breasts in olive oil. Add garlic. Sauté for about 2 minutes. Mix salsa, ranch dressing and lime juice together. Pour over chicken. Top with cheese. Lower heat to low/medium Cover and simmer until tender (About 15 minutes depending on altitude).
