I found this on a low carb site... very easy and tasty too! You won't miss the bread (much anyway lol!) I buy Boar's Head corned beef sliced thin. Yummy!

  • 453.59 g sliced deli corned beef
  • 113.39-170.09 g swiss cheese
  • 453.59 g sauerkraut
  • 59.16 ml low-carb thousand island dressing (I buy low-carb brands)
  • 59.16 ml sugar-free mayonnaise
  • 14.79 ml dill relish (or 1 tablespoon splenda sweetened relish)

  1. In a large casserole dish sprayed with PAM, layer slices of corned beef (the thin sliced - not chipped - works best). Kind of scrunch them up with an "uneven approach" so it's not a slab of corned beef.
  2. Drain saurkraut of 1/2 its juice and lay atop corned beef (if you like the sweeter variety of kraut, thoroughly rinse off canned/jarred juice and replace with a bit of cool water -- toss 1/2 tsp Brown Sugar Twin or Splenda into it before adding to the casserole dish.) Top with swiss cheese layer and bake at 350?F for 15 minutes or until cheese is melty but not liquidy.
  3. While dish is baking, in separate bowl mix Thousand Island Dressing, Mayonnaise, and Relish.
  4. Remove casserole dish from oven, slice in 4 serving-size squares and top with dollops of dressing mixture.

Made it today, just 1/2 recipe. I used 8 oz deli corned beef, 1/2 can of sauerkraut (totally drained), topped it with 4 Tbsp Thousand Island dressing (Walden Farms, 0 carb), then about 3 oz. of cheese. We ate it on homemade, almost 0 carb bread, which I grilled in butter. We didn't make the topping, but had extra Thousand Island dressing on the side. Felt like we weren't on a diet. Wonderful, quick meal.

I made this using left over corned beef roast from st. Pattys day. I made it in a 8 x 8 pan. Turned out great. Husband really liked it.

I'm afraid we've created a monster. I made this and my husband said: "This is so good. I could seriously eat this every week. Can we have this again next week?" We've had it the last three weeks, I'm pretty sure. It's so good - and so simple! Thank you, thank you, thank you.
