Low Carb delish stuffed pepper

  1. Prepare Quinoa with chicken stock according to package directions.
  2. brown ground beef and removed from pan, reserving beef fat.
  3. add olive oil and sauté onions, pepper tops, celery, garlic and eggplant. until all veggies tender and onions are translucent.
  4. Add tomato paste to veggies and small amount of additional stock or water if necessary.
  5. Add cooked quinoa and stir in Ketchup.
  6. Add seasonings and stir to combine.
  7. Stuff peppers with veggie mix and top with additional ketchup and bake until peppers tender.
