Guilt free and healthy pancakes!

  1. In a bowl, lightly mix all the dry ingredients first. As soon as you add the liquids the batter will rise. If you plan to make multiple pancakes, use a big bowl.
  2. Do not over mix the ingredients. Lightly fold everything a few times.
  3. Cook on a greased skillet or griddle over medium to medium high heat until golden. I normally cover the pan and that helps it cook faster.
  4. Serve immediately.
