Cook time is freeze time.
- 2 cups pineapple-coconut juice
- 10 ounces fresh pineapple
- 2 (1 1/3 ounce) packages sugar-free instant lemon pudding
- 18 popsicle molds (3 oz each) or 18 plastic cups (3 oz each)
- 12 popsicle sticks (if needed)
- Pour the juice & pineapple into a food processor. Cover and blend until smooth.
- Pour into a bowl then whisk in the pudding mix, roughly 2 minutes.
- Pour 1/4 cup into each cup or mold, and insert popsicle sticks. Freeze until firm.
