  1. Ok, here's the deal, use GOLDEN flax seed meal. It has a milder flavor. I double this recipe and use a 4" ramekin. Dump the Giant muffin out immediately on its side onto a cooling rack. The cooling rack leaves lines to cut slices of bread. The ramekin size is perfect for "round bread" and works beautifully for a sandwhich. I have used this recipe for savory and for sweet. Leave out the cinnamon, vanilla and splenda and add Italian seasonings, a dash of salt and any other seasonings you like. Garlic maybe. I usually cook for less time for a moister bread and it turns out perfectly. I can even use it the next day if I store it in a ziplock bag. Awesome recipe. I am eternally grateful for it.

  3. I am on a very low carb diet, and required to take flaxseed for digestive purposes. This is a tasty way to get my flaxseed. I toasted it with butter after microwaving it and added some more splenda on top! What a tasty treat! Never thought a 1 min microwaved muffin could turn out so scrumptious.
     
  4. Pretty good for a quick low carb snack, I added a drop more of vanilla and 1/2 tsp of splenda. When I let it cool off for a few minutes I put a little butter on it and put in the microwave for 15 seconds...Mmmm!
     
  5. I'm very pleased with how this turned out. It's amazingly good for something so quick and easy and low carb. Next time I think I'll spread a bit of cream cheese on it. This will certainly become a staple in my house!
