Easy and delicious! I microwaved frozen cauliflower with the (chopped) garlic. Then mixed everything together with a hand mixer. Seasoned with salt and pepper last.
I just made this tonight. I was out of cream cheese so I did it with butter only. Boy was I happily surprised when a frozen bag of cauliflower turned into creamy mashed potatoes... Thank you so much for sharing the recipe, it is a keeper!
Just started low-carb eating, and it has been successful so far.... but MAN, did I miss mashed potatoes. This is FABULOUS!!! Thank you, thank you, thank you! I doubled the recipe, misread the recipe and threw in 8 ounces, instead of 6, of cream cheese, so it turned out a bit more soupy than traditional potatoes. But the flavor was excellent. I, too, left the garlic in and it was wonderful. I have tried other recipes for mock potatoes with cauliflower, but this one is the keeper.
I dare anyone who claims not to like cauliflower to try this and not finish an entire serving. I left the garlic in and it wasn't overpowering at all. The cream cheese took it over the top. Thank you.
Very good! My husband and I have been on a low-carb eating adventure for the past year, and we have definitely missed mashed potatoes. I was a bit skeptical while I was whipping the recipe together... but when it all came together it was VERY good. I will be making these again very soon!
I've tried many recipes for pureed cauliflower but this is the one I prefer the most. I also find if you just steam your cauliflower in those steam bags for the microwave, you don't have to deal with water. These are also great made as "loaded" with shredded cheddar, crispy cooked bacon, chopped green onions and sour cream on top (just like a loaded baked potato or loaded mashed potatoes).
My husband even liked it and he doesn't like cauliflower.
This was so YUMMY! We did not have garlic cloves on hand and so we used a dash of Tastefully Simple's Garlic Garlic and that worked like a charm. I'm so glad I found this!
This is delicious! I put all ingredients into my food processor and purees till smooth. Very good. I also make it with just the cauliflower and butter and serve with meatloaf or any other time we would normally have mashed potatoes. Thanks!
Delish! And the best thing - this was too easy, so I wasn't too sure at first about it. HAD to add another big fat garlic clove, tho. SO, now I'm going to make it with the green-colored (broccoli) cauliflower, the orange-colored - which has a 25% higher Vitamin A content... and the purple-colored cauliflower also for beautiful colors.
