This soup is awesome! I made a few adjustments. I cooked the sausage and 1lb of super lean hamburger together with the onions and peppers. Drain the fat really well and then use napkins to soak up any additional grease. I also added a can of tomato juice to make it a little more soupy. Use the already sliced thin pepperoni's, I spread them out on a paperplate lined with paper towels and cooked in the microwave for a minute or so. Blotch all the grease with the towels. Pepperoni is super greasy. This will help out a lot. My entire office loved this soup. Thanks for the recipe!!!
We liked this recipe very much. I took the advice of another viewer, and added a can of Tomatoes with chili's. We loved it spicey. the only other thing I did was add 2 8 oz. cans of Tomato sauce. For those who do NOT like spicey foods, I would advise using just plain diced tomatoes. I really think two cans make a big difference. We even had leftovers the next night, and it was just as good as the first time.So easy to make! Simply throw it in a crockpot and forget it. I also made it a second time, and didn't use a crockpot. Took no more then an hour to prepare. Crumbled goat cheese was delicous on it!
This is a fantastic soup! It's delicious! If I owned my own restaurant this would be my house soup! The best thing about it is that it's so very easy to make
This was soooo yummy! Even my picky toddler loved it. Thanks for a great low carb soup :)
I thought this recipe was quite good but hubby said it was "wickedly awesome"! We are more worried about fat than carbs so used our favourite turkey sausage & turkey pepperoni to make this a low fat soup as well. I used light marble cheese as that is what we had on hand.
Wonderful! I only used 1/2 a bell pepper (because I'm not a big fan) and added additional beef broth, but other than that I made exactly as directed. YUM YUM! Everyone loved it. Even my picky little eaters.
This was surprisingly awesome! I have to say I had my doubts but man, this was so yummy! I'm not a huge fan of Italian sausage so I added hamburger meat instead and I added thyme and parsley. The cheeses at the end are a great compliment. This will be something I make regularly, thank you for sharing this!
I made this soup, and added another can of diced tomatoes as other reviewers suggested. Glad I did! I would also suggest making sure you get REAL pepperoni, and not settle for turkey. The texture was weird. Otherwise, with a little tweaking, this soup will be in our regular routine.....very, very chunky. Thank you!
This soup was wonderful with a nice garden salad! Had it for dinner and then again the next day for lunch. We added a pound of browned ground beef for some more umph. We also took a short-cut with frozen peppers & onions. Thank you for sharing this delicious recipe!
The taste was OK but it was very greasy from the meat. I believe you may need to par-boil the pepperoni first to get the grease off.
