Low Carb Breakfast Patty

ingredients
- 1 lb breakfast sausage (whichever brand you prefer)
- 2 large eggs
- 1 cup cheddar cheese (shredded)
- 1⁄2 teaspoon garlic powder
- 1⁄2 teaspoon onion powder
- 1⁄2 teaspoon paprika
- 1⁄2 teaspoon red pepper flakes
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon black pepper
directions
- Preheat oven to 375 degrees.
- In a bowl combine all ingredients until thoroughly mixed.
- Line a cookie sheet with foil and spray lightly with a non-stick cooking oil.
- Form mixture into 1-1/2" to 2" balls and place on foil.
- Bake in oven for 25-30 minutes or until done. The balls will somewhat flatten out into a semi-domed patty shape.
- Remove from foil and place cooked patties on several layers of paper towel to remove some of the excess oil.
- Serve immediately or allow to cool and place in freezer bags for freezing.

I love to eat and cook, I learned to cook from an early age by "helping" my mom in the kitchen anytime I could. Growing up in the south and being of Croatian descent my diet consisted of a lot of high protein meals. Unfortunately they were also a lot of battered fried foods and hight starch content. Something had to give and it happened to be my waste line. I was overweight most of my life because of the diet I was accustomed to. About four years ago I tried Atkins diet. I lost over 60 pounds in a little over a year and have kept it off. I've never felt better and my last physical concurs that I've never been healthier.I am now strictly a low carb eater and most of my recipes and food thought revolve around preparing and eating dishes that fit my eating lifestyle.
