This is a modification of the recipe I really liked for scollops and gingered sweet potatoes. I am always looking for ways to reduce the calories in recipes, as I am always battling weight.
- Dice the yams in 1/2 inch cubes and place in boiling water for five minutes or until softened, but still holding their shape.
- Dice the apples, leaving the peel on, in pieces the same size of a little larger. Add them to the yams, adn cook three minutes longer until yams are soft and so are the apples, but the apples are not yet mushy.
- Drain the water.
- Mix the brown sugar adn the ginger powder together and sprinkle it over the yams and apples. Combine until well mixed. Keep warm until served.
