This is a modification of the recipe I really liked for scollops and gingered sweet potatoes. I am always looking for ways to reduce the calories in recipes, as I am always battling weight.

  1. Dice the yams in 1/2 inch cubes and place in boiling water for five minutes or until softened, but still holding their shape.
  2. Dice the apples, leaving the peel on, in pieces the same size of a little larger. Add them to the yams, adn cook three minutes longer until yams are soft and so are the apples, but the apples are not yet mushy.
  3. Drain the water.
  4. Mix the brown sugar adn the ginger powder together and sprinkle it over the yams and apples. Combine until well mixed. Keep warm until served.
