Low Calorie Blueberry Muffins

Lovely lush muffins which you can varietise with different berries, fruit (fresh and dry) and nuts. Very easy to make.

  1. Mix together flour, sugar, baking powder and salt in a medium-size bowl.
  2. In a small bowl beat egg whites, orange juice, oil and vanilla
  3. Add to dry ingredients until just moistened.
  4. Fold in blueberries.
  5. Fill muffin cups (sprayed with nonstick cooking spray) about half full.
  6. Bake at 400 degrees for 17 minutes or until golden brown.
  7. Cool and serve on it's own or with a little creme fraiche!

The batter was super runny and I thought I made them wrong but they turned out great and tasted great!

The batter was very runny but I followed the instructions and filled the cups half way......they did not rise much at all. Tasted ok but didn't look like muffins really. I think maybe more flour is needed and maybe only make 6 instead of 12.
