Low Calorie Beef and Beans Chili

This recipe was originally adapted from Rachel Ray's Indian Summer Turkey Chili, but has morphed into something new over the course of a few years. Delicious!

  1. Heat oil in large pan.
  2. Saute onion till translucent or a tiny bit brown.
  3. Remove onion from pan and set aside.
  4. Start browing beef in same pan. Add spices and Worcestershire when there is still a little pink left and continue browning for another 5 minutes.
  5. Add the beer to deglaze pan and continue heating till beer reduces a bit.
  6. While you're sauteeing your onions and browning your beef, drain and rinse the beans and put in a large pot. Pour tomato sauce and barbecue sauce over beans. Add the sauteed onion when it's ready.
  7. Pour beef/spice/beer mixture into bean/sauce mixture.
  8. Add your hot sauce, to taste.
  9. Heat pot of chili over medium till it begins to bubble.
  10. Reduce heat, cover and let simmer for as long as you want, but at least an hour. Taste and add no-salt salt substitute, if you'd like.
  11. Enjoy the chili plain or with low fat shredded cheddar cheese or Fage 0% greek yogurt!
