Low Cal Vegan Applesauce Pancakes for One or Two

ingredients
- 78.78 ml flour
- 3.28 ml baking powder
- 59.14 ml unsweetened applesauce
- 59.14 ml water
directions
- Mix all ingredients together in a medium sized bowl until smooth.
- Let it sit for a couple of minutes (literally, maybe 2 minutes).
- Heat a non-stick skillet/pan to medium heat.
- Cook mixture as you would normal pancakes, flipping over to the other side once bubbles appear.
- Serve with yummy toppings! I like to use Greek yogurt + fruit puree with some chocolate chips.

Are these fluffy pancakes from Heaven? No. But these pancakes are good when you have nothing in your pantry. So, I'm frugal, and left all the food I bought last week at my boyfriend's house. I could go out to buy more food or I could starve... or I could make something with the only food item I have in my fridge that is remotely edible: applesauce. What to make with applesauce when you're too cheap to go out and buy milk or eggs? These pancakes. Unlike the maker of this recipe, who is very, very healthy, I am not. I like things sweet. So I added a tablespoon of sugar and a shake of cinnamon (yes, I know, changing the recipe is the worst and I shouldn't be reviewing but some other poor, cheap soul without any food in their pantry is going to stumble upon this recipe and, sans my review, not make it and STARVE instead, so I chose to review and keep a person alive another night). At first taste, I thought "hmm these are pretty bad". Then I put some syrup on them and let the syrup soak into the pancakes, and the 3 pancakes I had just promised to my dog (back when I thought they were pretty bad) migrated to my plate. My dog's portion got smaller and smaller as mine got larger and larger. With syrup, they actually turned out pretty good! So, if you're super health conscious or you've got nothing in your pantry and can't (or won't) go buy more things, make these pancakes. Just be sure to top them with syrup or that scrumptius fruit compote the recipe's author mentioned but didn't share (I would call her mean for withholding that recipe from us, but I'd have been too cheap to go buy the ingredients anyway).
