Very good tangy mustard dressing with a nice creamy consistancy. It's not extremely lowfat (light mayo has about 4g of fat/tbsp) but a good substitution for other creamy dressings. I used it as a dressing for a broccoli/cauliflower slaw with toasted pecans and green onions and it worked perfectly. What's better is that it made PLENTY of dressing so there was a good amount left over to save for regular salads later on. Also, being made with mayo means it will last for a long time in the fridge.
- 1 1⁄4 cups light mayonnaise (Best Foods or Hellman's)
- 1⁄3 cup apple cider vinegar
- 1⁄3 cup Splenda granular
- 1⁄3 cup water
- 2 1⁄2 teaspoons garlic powder
- 1 1⁄4 tablespoons yellow mustard
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
