Light and refreshing!


  1. Thinly slice the cucumber, sprinkle with salt.
  2. Let sit for 20 minutes.
  3. Take cucumber slices in hand and squeeze out all of the juice into a bowl.
  4. Then chop up the cucumber in little bits and add to bowl.
  5. Mix in the yogurt, lemon, salt and pepper.
