Love in a Black Bean Brownie

Adapted from, but changed a bit. Black bean taste is there, but pretty much masked. Used yogurt to replace oil, and agave to replace sugar (should be 3/4 c. sugar in all, but i ran out of agave...) I'm usually only a fan of the batter, but I actually like the finished product too!

  1. Preheat the oven to 350°F Spray an 8 X 8-inch baking pan with nonstick cooking spray and set aside.
  2. Place the black beans food processor (Magic Bullet was all I had, but it was sufficient); process until smooth and creamy. Add 1/2 Celsius chocolate chips and grate them a bit.
  3. In a mixing bowl, add eggs, yogurt, agave, sugar, cocoa powder, vanilla extract, cinnamon, baking powder, flour, and salt and mix. Add in black bean and chocolate chip puree and mix well.
  4. Pour the batter into the prepared baking dish and sprinkle the top with the remaining ¼ cup chocolate chips.
  5. Bake 25 to 30 minutes, or until the edges start to pull away from the sides and a toothpick inserted in the center comes out clean. Cool in the pan before slicing.
